Moms Need A Little Summer Time Fun And Relaxation

Wine? Relaxation? Mommy time??

Yes, all of these things are good for us lol… I love when we have company and I get to try new things. Wine and fruit are always a good thing to mix together so why not share some of these recipes with everyone. I found these on the Publix website and they are simply irresistible and delicious. I get a lot of my dinner ideas from Publix and I’ve had much success with them.

Summer is in full swing and I’m sure everyone is doing a lot of entertaining. In stead of buying a bunch of bottles of wine for everyone to choose from just make one or two of these fabulous recipes and you will be sure to delight just about anyone’s pallet. I like the idea of making a pitcher or two to please my guests and the fruit is just amazing after a little while of soaking in one of these fabulous mixtures. So next time your having company think of these recipes, they will be sure to please your guests.

Red Wine Sangria

1/4 cup brandy
2 tablespoons superfine sugar
1 (750-ml) bottle chilled red wine (like Marqués de Cáceres Crianza)
2 oranges, thinly sliced
1 apple, thinly sliced
1 pear, thinly sliced
1/2 lemon, thinly sliced
1 1/2 cups club soda
Combine brandy and sugar in large pitcher; stir until sugar dissolves.
Add wine and fruit slices. Cover and chill 1 hour (or overnight).
Stir in club soda just before serving over ice.

White Sangria with Plums and Nectarines


1 (750-ml) bottle dry white wine (like Prophecy Pinot Grigio)
1/4 cup light rum (optional)
2 tablespoons superfine sugar
2 plums, thinly sliced
2 nectarines, thinly sliced
1 lemon, thinly sliced
1 1/2 cups club soda
Stir together in large pitcher: wine, rum, and sugar; stir until sugar dissolves.
Add fruit slices. Cover and chill 1 hour (or overnight).
Stir in club soda just before serving over ice.

Pineapple Mojito Sangria


2 limes, thinly sliced
1 (1-oz) bag fresh mint, leaves only
1/3 cup superfine sugar
1 cup pineapple chunks
1 (750-ml) bottle medium-bodied white wine blend (like Apothic White Wine Blend)
1/2 cup pineapple juice
1/2 cup white rum (optional)
2 cups lemon-lime soda
Garnish: pineapple wedge and mint leaves
Muddle lime slices, mint leaves, and sugar in large pitcher.
Stir in pineapple, wine, pineapple juice, and rum. Cover and chill 2–3 hours.
Stir in lemon-lime soda just before serving over ice. Garnish with a pineapple wedge and mint leaves.

Cranberry Sangria


2 cups fresh cranberries (plus extra for garnish)
1 cup sugar
1 cup water
1 (750-mL) bottle fruity red wine
1 cup fresh orange juice
1/2 cup brandy (optional)

Place cranberries, water, and sugar in medium saucepan and bring to a boil. Reduce heat to low; simmer 5–6 minutes or until cranberries burst. Strain mixture, using back of spoon to squeeze out juice; discard solids.
Transfer juice to a large pitcher; stir in wine, juice, and brandy. Chill 2 hours. Serve over ice; garnish with cranberries.
Other Preparation Methods
Cranberry Sauce: Combine 12 oz cranberries and 12 oz cherry preserves in saucepan; bring to a boil. Reduce heat to low; simmer and stir 12–15 minutes or until cranberries burst and sauce reduces and thickens. Serve warm or cold.
Cranberry Butter: Place 1 stick softened butter, 1 cup fresh cranberries, 1/2 cup walnuts, and 2 tablespoons each honey and brown sugar in food processor bowl; process until smooth. Chill 20 minutes or until firm.
